T he Benevento area, in addition to representing the most cultivated area of Campania, is now crossed by a renewed productive enthusiasm of quality, thanks to the entry of new young actors. Mariano and Raffaele Assini, courageous wine entrepreneurs with a long family tradition, who decided back in 1991 to undertake and realize their great dream: Ca’ Stelle, fits fully into this panorama.

The goal of the Ca’ Stelle project is to give expressive value to the typical characteristics of ancient indigenous and traditional grape varieties of Sannio in the Benevento area, through the use of modern production technologies, respecting tradition, the typical variety and the link with the territory of origin.

T he grapes, in particular Aglianico and Falanghina, selected on the basis of precise quality indicators, come from the Sannio and Castelvenere hills, where the vine and its cultivation represent the signs of the cultural and social identity of the territory.

The cellar, equipped with the most modern production technologies, extends over a covered area of 800 square meters. Here the grapes, harvested exclusively by hand, are brought on the same day for processing and immediately vinified in a controlled-temperature environment. After the final verification of the sugars, the acidity and relative comparison with the data previously collected in the vineyard, the grapes are de-stemmed and sent to soft pressing. The musts are then cooled; chemical-physical clarification of the musts is done, and fermentation starts.
